[PJUG Javamail] Update on Tapestry Demos

My apologies again for the technical problems; I had done two interellated
things recently:
- Switched my Eclipse version from 3.1 to 3.2
- Switched my demos from Tacos 4-beta-2 to Tacos 4.0.0

The latter change is what killed the client-side validation example, there
was a small change in the version of Dojo (the underlying cient-side
JavaScript toolkit).
